The perfect fluffy scrambled eggs require nothing more than some eggs, a little technique, and a little bit of butter. This will change the way you make scrambled eggs forever!
Here at The Stay At Home Chef we know that sometimes it helps to have a review of basic cooking skills. The method for scrambled eggs described here is a combination of the Gordon Ramsay method and the Alton Brown method. This combination takes the best of both and makes it approachable to the home cook.
Do you add milk for scrambled eggs?
You DO NOT have to add milk to scrambled eggs. We have found that the best fluffy scrambled eggs are made without milk, and instead use butter.
Are scrambled eggs good for you?
Eggs are packed with high-quality protein, vitamins, minerals, and healthy fats. They also contain all nine essential amino acids that the body needs and can not produce on its own. Meaning in a well-balanced diet eggs can be among some of the healthiest food you can eat.
Should I make scrambled eggs in a skillet or in a saucepan?
We have found that a small saucepan is better for making scrambled eggs than a skillet. The shape of the saucepan traps the heat differently and is able to cook our eggs from the side and slightly from the top as well as from the main heat source on the bottom, providing a better cooked fluffier scramble. We also found that nonstick saucepans work better.
Chef’s Note: This recipe can easily be doubled or tripled to serve more people.

I absolutely love this recipe
This is the BEST way to make scrambled eggs! I use a non stick sauce pan. I’ve also substituted olive oil for butter and they still turn out so yummy.
These are THE best scrambled eggs, ever! My daughter and her boyfriend raved over them and that means something! Thank you
Now, this is a great technique for fluffy scrambled eggs, and I like the idea of using a saucepan when cooking them. (I have used milk in them before, but you need to be very conservative about how much you add because too much really changes the texture of the eggs) And along with the scrambled eggs i’ll add some sausage, cream cheese, diced peppers, mushrooms, and a little seasoned breadcrumbs…. and when you’re serving them, top with shredded Mexi-melt 4-cheese blend. Ouch! But be prepared to make seconds….
Amazing scrambled eggs. Try them out for yourself. Yum!
Never did this before and it makes a huge delicious difference! Thank you!
They do look delicious but I really haven’t found a recipe that I prefer over my scrambled eggs. Seems everyone starts their scrambled eggs in the saucepan. I don’t. Doesn’t mean I am not open to new methods. Keep sending us your recipes. I do love them.
You are the Awesome Stay At Home Chef. Love this ! so fluffy!
I’ve always made my scrambled eggs beat up with a little milk of cream. So today I decided to try this method and oh my! The best scrambled egg I ever had. Thank you!!
I’ve been doing mine like this for years ever since watching Gordon make them. We prefer the taste over scrambled made with milk. They are softer creamier and do not get tough.
