Looking for an easy weeknight dinner? Then look no further! This delicious dinner calls for whole ingredients and pantry staples for that essential made-from-scratch flavor. It only takes minutes to put together and pop in the oven, leaving you plenty of time to catch up with the family before sitting down to dinner.
We took our deliciously addicting Honey Roasted Smashed Potatoes and turned it into a complete meal. The sauce is absolutely killer! Every time we make it, people are fighting over who gets to lick the pan. But honestly, can you blame them?

Mustard Options for Baked Honey Dijon Chicken and Potatoes:
To make this recipe really shine, be sure to use whole grain dijon mustard. Not only does it give a beautiful finished look, it’s also super tasty. If you don’t have it though, you can always use regular dijon mustard.
-
Adding Parsley:
This recipe can be garnished with a little bit of chopped fresh parsley to add a little bit of color. Without the parsley it can be a bit bland looking, but trust me, this meal is packed full of delicious flavor!

Can I use any other cuts of chicken in this dish?
We love the simplicity of chicken breasts, because we always have extra on hand. If you prefer chicken thighs or even chicken legs, you can always substitute. Keep an eye on the temperature and make sure you still cook to an internal temperature of 165 degrees Fahrenheit.

Maybe our IKEA dish isn’t 9 x 13 but I can only fit 2 chicken breasts in the pan and no veg. So I do 2 pans side by side and pour the honey mustard sauce over both. It is so delicious! I have made this recipe a few times, once with potatoes, once with mixed veg, and tonight with carrots and zucchini. The whole family loved it!
So, love this recipe, trying to make it in a crockpot tonight. I will update later!
This was very good, my husband loved it. I will be making again! Thanks!
Had company for dinner tonight and made this along with your green bean recipe. Everyone loved it. The chicken was so tender and you are right about the flavor of the sauce. Delicious!! I have never been much of a cook or baker but since finding you I have made things I never would have tried like your scones and cinnamon rolls!! Your easy step by step directions has made this so easy for me. When my husband sees my computer on the kitchen counter he knows I am making one of your recipes and he is expecting something good!!Thank you!!
Once again a great recipe ! Thank you for all your wonderful dishes .
I made this last week for my mom, picky sister and brother in law. They LOVED it. I don’t like honey, so I used brown sugar. I also added some thinly sliced onion and some broccoli. It was very, very good! Thank you for the recipe. Simple and delicious. By the way, I’m making it again tonight!
Wow, this came out better than I thought it would. I added 2 cloves of garlic because you can never go wrong with garlic and I couldn’t find my oregano so I used parsley. 👌
Making this tonight for the second time. It’s so good! And super simple.
40 minutes at 375 left me with hard potatoes and still raw chicken. I bumped the temp to 425 and let it sit for another 20 minutes. For the potatoes to be done, the chicken was kinda dry. I love the sauce and served it in cups to dip the chicken into to keep it moist. The potatoes were nicely seasoned as well.
Rachel thank you.I have tried many of your recipes every one had turned out delicious.I know if I
m making your recipe for supper it
